The Sanpou workshop was established by Aoki Hamono, the company behind Sakai Takayuki, to preserve traditional Sakai knife-making while developing the next generation of skilled craftspeople. Sanpou represents iron, fire, and water, the three treasures of Sakai blacksmithing. A logo incorporating these elements is imprinted on the blade as a mark of Sakai Takayuki craftsmanship.
This 150mm petty features a White #2 carbon steel core clad in stainless steel. White #2 is known for taking an exceptionally sharp edge while remaining easy to sharpen. The compact blade is well suited to trimming meat, portioning fruit, cutting smaller vegetables, and other jobs where a full-size chef knife feels cumbersome. Its rustic kurouchi finish is paired with a semi-round olive wood handle suitable for either hand.
Care Instructions: The exposed White #2 steel along the cutting edge is reactive and will develop a patina with use. Hand wash and dry the knife promptly after each use. Do not place it in a dishwasher or leave it wet. Apply a light coating of protective oil before extended storage.Brand: Sakai Takayuki
