Konosuke is one of the most respected knife brands in Sakai, Japan - a city with centuries of cutlery production history and home to some of the most technically precise blades in the world. These Swedish stainless gyutos are built to Konosuke specifications and ground laser-thin from a single piece of Swedish stainless steel rather than a san mai construction. Sakai knives of this caliber are known among serious enthusiasts for exceptional geometry and cutting feel, and the Konosuke Swedish stainless line has built that reputation on consistent performance and refined execution.
This 240mm gyuto is a mono steel blade - one piece of Swedish stainless ground laser-thin with a fine-grained structure that takes a very sharp edge and holds it well. At 235mm actual blade length and 48mm height it has the proportions of a serious working chef knife. The even 50/50 grind runs cleanly from heel to tip. The octagonal ho wood handle with a buffalo horn ferrule gives it a traditional Japanese presentation. Please note: Konosuke intentionally leaves a small gap between the handle and machi for aesthetic and traditional reasons - this is a deliberate design choice, not a defect.
What Customers Are Saying: One reviewer calls this the best knife in their collection after working through many options across different price points. They describe it as light, nimble, and exceptionally well balanced, noting it cuts ingredients effortlessly. Highest recommendation given.
Care Instructions: Swedish stainless is a low maintenance steel. Hand wash and dry the blade after each use rather than running it through a dishwasher, and avoid cutting through bones or frozen foods. Use quality water stones when it is time to sharpen.

This knife currently ranks supreme in cutting feel within my knife collection and I own a few. Light, nimble and very well balanced. Effortlessly cutting ingredients like no other. I have purchased many knives from CKTG and this is the best one yet. Get it! you wont be disappointed.
