Hatsukokoro Chromax Petty 140mm

Item #: HMX-P140
Our Price: $110.00
Availability:
A petty knife earns its keep on the smaller jobs a chef knife is too large for: trimming, peeling, and detail work done entirely by hand. At approximately 140mm, this one stays light and nimble for repeated, precise cuts.

Hatsukokoro forges it in Seki City, Japan, around Chromax, a semi-stainless steel from Takefu Special Steel, sharpening with the bite of a high-carbon blade while resisting rust far better. The core is clad in stainless as a san mai construction, so only a thin strip at the edge needs real attention, and the surface is finished in kasumi, a soft satin look rather than a mirror polish. The handle is hinoki, a pale, aromatic Japanese cypress traditionally used in fine woodworking.

Care Instructions: Chromax is a semi-stainless steel, more resistant to rust than a fully reactive carbon steel, but the edge can still develop light staining or surface rust if left wet. Hand wash and dry the blade promptly after use. Avoid cutting frozen foods, bones, or other hard materials. Sharpen on quality water stones as needed.
